If you think Spain is all sun, sea and sand then think again. The Ribeira Sacra region looks like it has been airlifted straight out of the Mosel in Germany. Beautiful undulating valleys criss-crossed by the iridescent rivers of Galicia. Wines are pure, fresh and invariably thirst quenching.
Javier Dominguez has been hailed for his heroic winemaking, a driving force behind the revival of this region and a lover of its indigenous vines in this spectacular and unforgiving landscape. Grapes are handpicked, allowed to macerate (sit on the skins), fermented in open french wooden tanks then aged for 18 months in oak barrels and 6 months in the bottle. Sounds like it should be a bold, heavy wine, but the granite slopes and an atlantic climate allow this wine to retain a beautiful freshness and searing acidity. It’s just divine.
