It’s SPARKLING. It’s FRESH. It’s SENSATIONAL…
An Irishman in England making a French wine… We’ll get in trouble for that last bit. Sparkling wine is thriving in southern England and this is perhaps top of everybody’s list. Why? Well it comes with pedigree: Dermot Sugrue was head winemaker at Nyetimber before setting up the Wiston Estate and now this is his passion project. The name of the wine might suggest that it’s not all plain sailing when going it alone but name anything worthwhile that was ever created without a bold vision and a lot of hard work.
The Trouble With Dreams is an outstanding expression of the Chardonnay and Pinot Noir blend. Parcels of grapes from Hampshire, West and East Sussex come together to make a beautifully balanced and refreshingly acidic wine. This wine has green fruit, green citrus, it is so refreshing you might think you’re actually supping the green fields of the south downs!
